When Life gives Lemons ...

Freeze them!

If, like me, you have some lemons sitting at the bottom of your fruit bowl from pancake day this is an ideal way to save them from the compost bin.  My usual go-to for old lemons is a lemon drizzle cake, but I know I am not going to get around to making it this week.  So freezing is what I will do.  Its very simple cut up the lemons; slices or chunks, however you fancy and freeze them.  I have wrapped them in tin foil (on its second use) or you could pop them in a Tupperware box.  Then the next time you need ice for a drink with a twist of lemon you just pop a couple in a glass.   The perfect refreshing lemon drink for when the weather picks up.  Really simple and saves a lemon going to waste.
